Cotton Candy Grapes: YUM

Hello! Everyone has a different taste when it comes to their preferred snacks. Some have a sweet tooth and others enjoy the salty and savory. I, myself, love my salty snacks and don’t eat sweets very often. However, a certain time comes around every month that leaves me craving ALL of the sugary goodness. The worst part? I never have anything to satisfy the cravings in my apartment! Until now. Allow me to introduce the cotton candy grape:

I don’t know if any of you have heard of cotton candy grapes or if they are an Ohio thing. But, every summer when the farmers markets begin opening, my Facebook newsfeed is flooded with customers raving about this cotton candy flavored fruit. I have always been interested in trying these because, despite lacking a sweet tooth, I love cotton candy… Go figure, lol. Unfortunately, I have never seen them at the grocery store before…

Until my last grocery shopping trip, that is! For Mother’s Day, I went to Giant Eagle to get flowers and decided that I might as well restock my cabinets while I’m there too. Giant Eagle has a much wider selection than my normal stomping grounds of Marc’s but they are definitely more expensive, which is why I don’t shop there often.

Although I felt like I was splurging on all of my Giant Eagle purchases, it was hard to say no to things that I’ve never even seen before. Like my grapes, for example. I couldn’t believe it when the cotton candy grapes were just casually sitting in their fruit department and put the bag into my cart with cat like reflexes, eager to go home and try them.

And, let me tell you, these grapes did not disappoint. Popping one into your mouth is the equivalent of taking a tiny bite of cotton candy and it’s delicious. And it is a WAY better option than eating an entire box of chocolate while Aunt Flo visits for the week! 😀

Hi! With Ohio’s stay at home order still in place, Johnny and I have been eating at home nine times out of ten. Don’t get me wrong, we still enjoy the occasional Taco Bell but, for now, it just feels easier and safer to do our cooking at home. For the most part, we’re fine with the basics of grilled cheese, pasta, and oven pizza. Lol, but sometimes people need a little bit more. So, may I present the mac n cheese pizza?

When Johnny and I first started dating, he created a mac n cheese pizza that was ready for when I arrived home from work. It was basically the sweetest and most delicious thing ever and it has since become one of our favorite “treat yoself” meals. Ready for all the carbs? Just follow this simple recipe:

Ingredients:

  • 1 Oven pizza of your choosing
  • 1 box or packet of mac n cheese of your choosing
  • Shredded mozzarella to sprinkle on top

Directions:

  1. Make the box of mac n cheese. About halfway through, start preheating the oven for your pizza.
  2. Once the mac n cheese is done and the oven is preheated, cover the top of the pizza with a layer of the cheesy goodness. Then, sprinkle the extra mozzarella on top.
  3. Cook your masterpiece and enjoy!

Is the mac n cheese pizza the finest of quarantine delicacies? Probably. And, it always goes down smooth at chez moi. Give it a try and watch your life change for the better.

White Claw Lemonade Mixed Drink – YUM!

Hello! This stint in self-isolation has taught me that there is a whole lot more than going out to the bars… So, in the meantime, I’ll just be drinking at home. Lol, this past weekend while Johnny and I were binging on Community (Hilarious) and Animal Crossing (So fun) he made us a very simple but delicious mixed drink that I can totally picture us enjoying on my balcony once it’s nice and warm out.

Unfortunately, it will be a while before we can revisit our favorite stomping grounds with our friends to drink summery drinks on the patio. But, for now, a White Claw Lemonade will do just fine:

During our TV marathon, Johnny mixed one lime White Claw with a healthy splash of Newman’s Own Virgin Lemonade. I always have a carton or two of this lemonade in my apartment because it’s really tart, which is what I prefer. When combined with the fizzy carbonated lime Claw, it made a boozy Sprite and it went down way too easily.

Perfect for making a pitcher to share on the porch or to sip on while you fish in your Animal Crossing village, I think Johnny’s “hard lemonade” will be a quarantine staple in our apartment. Yum! 😀

Dinner For Two Pt. 2

Hi! On April first, Johnny and I celebrated seven months of PASSIONATE LOVE with each other. Thankfully, neither of us said April Fools and it was easily the best day I’ve had since all of this self-isolation business. If you recall from previous posts, I love cooking for my boyfriend. And if you recall from a very previous post, Johnny surprised me with dinner he made a few weeks ago when I came home from work.

Just when I thought that he couldn’t top himself, he raised the bar as he always does. On our seven month, we both got dressed up and when I got home from work I couldn’t believe my eyes when I opened the door. As I stepped in, I heard music playing on our record player, smelled garlic bread, and saw a fireplace screensaver burning brightly on the TV.

The best sight of all, though? Definitely seeing Johnny standing in the kitchen in a button down top and skinnies stirring a huge pot of spaghetti. We ate a delicious meal that he got stressed out cooking at our coffee table that he cleaned off special for the occasion. Then, we drank champagne and listened to all of our favorite songs. I lied when I said it was one of the best days of self-isolation because it was one of the best days of my life.

This has been a very stressful time for both of us and it was so nice to escape those feelings of unease for the day to celebrate our relationship. Johnny’s theory was that he wanted to make the dinner special because he couldn’t take me out to a restaurant. He succeeded with flying colors and, to me – a night in like that trumps going out on the town any time.

Yo, yo, yo. For as long as I can remember, my dad always would have dinner ready for my mom when she got home from work. CHARLES is a culinary genius and specializes in oven pizzas and spaghetti. But, no matter what it was, my mom was always so appreciative because she was hungry!

I love this part of my parents’ relationship so, needless to say, I was absolutely tickled when Johnny had dinner ready for me when I came to his house after work when we first started dating. He made a mac n’ cheese pizza and it was absolutely delicious. It has also since remained one of our favorite meals.

Earlier in March, Johnny had to work a lot of overtime and would get home around six each day. So, I always made sure that there was food ready for him as soon as he walked in the door because I knew how exhausted he was and how hard he was working. This was actually a treat for me because I love cooking for him!

I knew Johnny appreciated his ready to eat dinners a lot but I didn’t think anything of it because I was happy to do it. Then, his thoughtful ass moved me to tears. In the midst of the coronavirus, his overtime was cancelled, which means he would beat me home from work. He decided to leave out that little detail and I was so surprised to see his car in the parking lot when I got back.

When I walked in the door, Johnny was just taking the cheesy bread that he has been so eager for me to make out of the oven. He also had a glass of wine waiting for me. I was completely blown away and all I could do was start crying. Lol, I just couldn’t help it! It was hands down one of the sweetest things anyone has ever done for me and I felt so happy and like the luckiest girl in the world.

They always say that a man’s heart is through his stomach. This definitely rings true for Johnny but I had no idea that it could win over a woman’s heart so easily, too. It was the most delicious, slightly burnt cheesy bread I ever had.

Hi! If you’re anything like me, then you never say no to a good brunch. Despite almost always being slightly hungover, I revel in a boozy Sunday brunch complete with hearty breakfast food and fifteen mimosas. Well… more like two mimosas but I definitely think I could polish off fifteen of the most delicious mimosa mash up I’ve ever heard of…

Allow me to introduce you to the Lemonade Mimosa. Yes, you heard it correctly. A mouthwatering sweet/tart combination that I just had to read on about when someone posted the recipe on Facebook. And, let me be the first to tell you, the following recipe that can be found on Delish.com sounds… Delish! Take a look and be sure to visit Delish for more food and drink inspiration to spice up your meals!

Ingredients:

  • 2 tsp. lemon zest
  • 1/2 c. sugar
  • 1 lemon, thinly sliced, plus a wedge for rimming
  • 1 bottle champagne
  • 2 c. lemonade or pink lemonade

Directions:

  1. In a shallow dish, mix lemon zest and sugar.
  2. Rim champagne flutes with a lemon wedge and dip in sugar mixture.
  3. Place one slice of lemon inside each champagne flute, bending if needed.
  4. Fill flute halfway with champagne and top with lemonade. Serve.

 

When the weather begins warming up, I need a drink that is crisp and refreshing which is why I usually favor the Moscow Mule. So, what could possibly be better than ice cold lemonade and champagne during a muggy summer morning? The answer is nothing, of course!

Hello! If you’re anything like me, then I know you love some discount shopping! The Dollar Tree is my happy place and I always seem to be able to find a little treat or some food for chez moi at a fraction of the price of a normal grocery store. Speaking of going grocery shopping, I only go once every two to three months. Since I live alone, I stock up on everything I need to avoid weekly or even biweekly trips to the grocery.

However, I am in the phase of my extended time not grocery shopping where my cupboards are running a little bare. And by a little, I mean I’ve literally ate spaghetti every day for the past week, lol. Luckily, the Dollar Tree has my back and I was able to pick up all of these goodies for a whole thirteen bucks. Check it out:

Lol, so I know that looks like an excessive amount of the Arizona nachos n’ cheese dip, reminiscent of an adult Lunchable, but it’s actually not enough. These nacho trays are my absolute favorite snack on the planet. The small, circular chips are crisp, the cheese is spicy, and it really is a perfect and highly convenient snack for when I’m at work. And, of course, you need some Sour Skittles to wash it all down. 😉

I am also very partial to the Shells & Cheese kit because you don’t need milk to make it, which is great, because I haven’t had milk in my apartment for months! One of these tiny boxes makes a staggering amount of mac n’ cheese and it ends up feeding me for at least three days. And for a whole dollar, you just can’t beat that.

Finally, I was so pleased with the last sets of fake eyelashes that I purchased from the Dollar Tree that I decided to restock my supply. The last fake lashes I got were long and in funky colors because it was around Halloween when I bought them. They applied like a dream and lasted all night so I’m looking forward to testing out my simple pairs of black lashes on a day where I don’t feel like doing my makeup. Why A Balanced Diet Is The Best Method For Health And Happiness

We live in an age where people are following so many different diets to try and get the perfect figure or feel happier. But the big problem with this is that they are all, to an extent, fad diets. We live in a world where there’s so much fantastic food that the old expression “everything in moderation” is a far better option for everyone. But why should we avoid going for fad diets? And what can we do to make sure that we follow the rules of a balanced diet? Read on to find out!

There’s So Much Great Food Out There:

From a tres leches cake to Neapolitan ice cream, Aberdeen Angus burgers, and everything in between, there’s so much great food out there it can feel like hell depriving ourselves of these treats. Sometimes you’ve got to take inspiration from European cultures like the French. They know there’s so much fantastic food out there that they allow a little indulgence. When people opt for such a strict diet they’re doing it to make themselves feel better, but they seldom do. But if you can just follow the rule of eating healthily 80% of the time and allowing the rest for the things you really fancy, you can still eat all of that delicious food without feeling guilty.

Sometimes a more balanced diet can be as simple as exploring new recipes with an emphasis on what you need to be including more of. For example, if your diet lacks protein you could try out these ground beef recipes or search for dishes with plenty of beans or lentils if you are a vegetarian. Need more veggies? There are so many fabulous ways to dress up a salad to your liking! Trying out new recipes is not only an exciting way to switch things up but will provide yourself with more of what your body needs.

A Diet Implies That It’s Temporary:

We’ve got to get rid of the word “diet” and think about it as a lifestyle change. When we go on a diet for a specific goal like losing weight, as soon as we end up hitting our goal it’s likely we will put it back on. You’ve got to think about the overall benefits of a lifestyle change. For example, eating the right foods can help your skin, make you feel healthier, and even sleep better. But when we go on a diet of such extremes we are pushing our psychological limits. We might even be calorie counting in our sleep! It’s far better to make a gradual swap to a new way of eating.

The Jury Is Still Out On Many Fad Diets:

Because there are many fad diets that purport to be the key to youth, a lot of these diets don’t have the evidence. The one true barometer when you change your eating patterns is to listen to how you feel. So many people go to such extremes to lose weight that they can feel the shock. A crash diet is something that people do before bikini season, but does going through all that psychological hardship make you feel happier? The one true test of eating well is a little bit of what you fancy combined with foods that you know make you feel good.

Everything in moderation is the key. And when you eat the things that your body wants it rewards you with extra energy and less need for sleep. If you can follow the 80/20 rule where you eat healthily 80% of the time and leave 20% for treats, you’re not depriving yourself mentally and will still reap the benefits.

The Best Spinach Artichoke Dip EVER

Hi! One of my favorite snack foods has to be spinach artichoke dip with tortilla chips or Wheat Thins. I love the cheesy goodness along with the crunch of your dipping utensil and I enjoy it so much that I can eat it by the fork full! One of my client’s moms just so happens to make the best spinach artichoke dip that I have ever tasted and I am going to share it with all of you. The secret ingredient? Water chestnuts! Prepare to drool in five, four, three, two, one…

Spinach Artichoke Dip

  • 1 bag of fresh spinach (Think the size of a salad mix)
  • 1 bar of Philadelphia cream cheese
  • 1 can of water chestnuts
  • 1 can of artichoke hearts
  • 1 small bag of shredded mozzarella cheese

Chop up the veggies, mix everything together, and bake until light brown on top.

This recipe for spinach artichoke dip surpasses any kind that I’ve ordered at the restaurant or bought at the store by a landslide. The variety of cheeses combined with the crisp crunch of the water chestnuts makes my taste buds do a dance for joy every time. This is the perfect treat to make for a party or game night with your friends (I’ve already made it quite a few times for my “crew” and it has been a hit.) … But you might want to double the batch as it will go quick!

Hello everyone! If there’s one thing that Lil Red doesn’t believe in, it’s paying full price for just about anything. So, it’s pretty shocking that I really didn’t get into shopping at the Dollar Tree until this past year. One of my clients loves that store and I always end up there at least one time a week. It wasn’t until I took a closer look around until I realized that the Dollar Tree is friggen awesome and I have had much success shopping there, especially since moving into my apartment. Don’t believe me? Check out this big ol’ haul for yourself:

For twenty items I paid twenty dollars altogether and I am confident that if I purchased all of this at a normal grocery store it would easily be over fifty dollars. The Dollar Tree pulled through in the clutch for me at just the right time because after all of my holiday shopping this month, my credit card bill is going to be huge. BUT, I also have no food in my apartment. This will definitely tide me over until my bill turns over in December and I can do a bigger grocery shopping trip.

Also, can we please talk about the potato gnocchi and Arizona nacho trays?! They are both SO freaking good and the only thing that isn’t pictured is the nachos that I already ate, lol. They are a perfect snack for when I get home from work and I was so stoked that the Dollar Tree that I was at had them that I just had to get six, lol! The gnocchi is also a quick, easy, and delicious meal that my boyfriend and I both love and will be a perfect, simple dinner after we’ve both had a long day.

I have never quite understood the people that considered themselves above discount shopping but I, for one, will never be. Compliments of shopping at TJMaxx and Marc’s (a discount grocery store in my neck of the woods), I am sure that I’ve saved over thousands throughout the years and that ballin on a budget train isn’t going to end any time soon!
