To blanch, say, one pound of green beans to serve four, prepare a bowl of ice water, keep it near your cooker, and then bring a large pot of salted water to the boil. Because of bad weather, cool temperatures, and unpleasant conditions, we spend a lot more time at home over the winter than at any time of year. It’s the first room you see when you get home from work and the last glimpse of your house that keeps you going through the day and yet a lot of us don’t bother to make our hallways look good.
