Dishwasher: Is there a bigger time waster than having to wash dishes? It’s one of those household chores that will always be done with resentment – especially because with every next meal you’ll just end up with another load of dirty dishes to wash. There’s no need to martyr yourself by doing washing up that you hate. Invest in a dishwasher so you don’t have to waste any more time or energy on your dirty dishes. Or have the possibility of touching wet food in the sink!! YUCK!

Heated Towel Rail: Throughout the winter, showering becomes a problem. Of course, we all like to stay clean through the whole year – but no one enjoys that feeling of stripping off their pajamas in the cold air on a winter morning before stepping into the shower! Even worse is the coldness of climbing out again before you have your towel wrapped around you. It’s important, then, to make sure that you have a warm, cozy towel to heat you up when you get out of the shower. It’ll also dry your towel when you’re done, stopping it from smelling like a combination of damp and bath soap!

Microwave: A lot of people think of microwaves as the epitome of laziness but that is absolutely and categorically untrue. They promote convenience, but there’s no reason that that is a bad thing. Not only can you make cakes in microwaves these days, but you can also heat up leftovers from the previous day and use them quickly when you don’t want to have to clean up any pans or utensils. White Noise Machine: If you don’t sleep well at night, then a white noise machine is an absolutely essential investment. A lot of people can’t sleep in silence and are woken up by sudden small noises. A white noise machine will cover them up and enable you to sleep well in near-silence without the low hum of the TV disturbing your partner. So cool!

E-Reader: One of the best ways to expand your mind and open yourself up to the world around you is to read. Not only can you explore fictional worlds a million miles away from where you are, but you can also consider new ideas that will challenge you and force you to re-evaluate yourself – which is always a good thing! E-readers are useful because you can keep your entire library with you at all times. That means that you’ll never have to worry about what book to read next – and because of their size and weight, they’re much easier to take on vacation than a huge stack of paperbacks. The Kindle that I got from my boyfriend is one of my absolute favorites and I cannot recommend investing in an E-Reader enough!

If you love cooking, there’s probably one element of it you’re still never happy with. We’re talking, of course, about the amount of time it takes. Congratulations on your shiny new kitchen. Maybe you’ve gone all out on it and chosen some fancy features you’ve always dreamed of having. It looks beautiful and everything is still brand new. Perhaps you found inspiration from HGTV or companies like Kitchenfair to create your next level space. But if you’re not careful, the condition of your kitchen could quickly go downhill. Even with regular cleaning, it can seem like any new room begins to take a downturn as soon as it has been completed. While you don’t want to become obsessed with keeping it in good condition, you also don’t want it to lose its shine. So how do you find the balance between keeping your kitchen as it is and becoming a raging kitchen inspection monster? Here’s what you need to do:

Accept That There Will Be Wear and Tear: Before you think about a cleaning routine, there’s one thing you need to accept. Your kitchen will experience ordinary wear and tear, even if you do your best to look after it. In two, five, or ten years it’s not going to look the same. All the best chefs in the world have their own unique style of doing things. From dicing an onion to roasting potatoes and making a popular sauce, there are always little nuances and tricks which set the pros aside from us amateurs. However, long before these masters found their own style, they were learning some of those basic techniques which are essential for countless dishes. Here are some of the big ones every cook should know:

Blanching Vegetables: This is a method of cooking veggies quickly in boiling water, then plunging them into ice cold water to halt the cooking process and lock in all that vibrant color. The trick to good blanching is using a lot of salty water in the first boiling pot. Use about one cup. If it smells like the ocean, that’s great. Don’t worry – it won’t taste like that!

To blanch, say, one pound of green beans to serve four, prepare a bowl of ice water, keep it near your cooker, and then bring a large pot of salted water to the boil. Add beans to the boiling water in small batches and cook them for three to four minutes. Then, using a slotted spoon, transfer them to the ice water bowl until all the beans are thoroughly cooked and cooled. Drain the beans, glaze with a little butter and olive oil, and dig in.

Sear a Steak: This is a method that happens in restaurants every day, all over the world. There’s a good reason for this, so try to bring it into your kitchen! If you know that your steak cooking game is a little below-par, you should start practicing using high heat under a pan. The pros sear their steaks in a heavy, scorching hot skillet over a high flame.

To serve two, you’ll need to start with about a pound of skirt steak. Slice it into sizes of your choice and cook them two at a time. Once they’re looking done, leave them for around 15 minutes to let the juices really soak through the meat. Then, slice the pieces again, this time against the grain, and serve in a good pan sauce. Dice an Onion: This is one of the basic steps in so many different recipes, so make sure you’re not stumped by it! After peeling the onion, halve it through the root and set the two halves flat-side down on a chopping board. Then, keeping the root end intact, make a series of cuts parallel to the root, roughly a quarter of an inch apart. After this, hold it by the root end, turn it ninety degrees, and make another series of cuts cross-hatching the cuts that you already made. You may not get it right the first time, but stick at it and soon you’ll be able to get those perfect little cubes on demand!

Dinner Date Night

Dinner Date Night

Hi everyone and happy Hump Day! On Monday night, my boyfriend, Kyle, and I stayed in and made dinner together. We had so much fun cooking our meal and it was nice to have Kyle as my cheerleader/helper. We made zucchini enchiladas and guacamole and it turned out so fantastic! Take a look at our finished product and then I’ll provide you with the recipes so that you can make your own:

Zucchini Enchiladas:

This dish is a staple at my home so it was easy to wing the recipe. At my boyfriend’s house there wasn’t a lot of the spices that I needed to bring the heat to the enchiladas so I improvised for that. I also wasn’t cooking for a large amount of people so feel free to double the recipe if needed. My version made eight enchiladas.

Ingredients:

  • 1 large zucchini
  • 1 green pepper
  • 1 medium size red onion
  • 6 cloves garlic
  • 1 package of sharp cheddar shredded cheese
  • salt
  • pepper
  • basil
  • oregano
  • cilantro
  • tortillas
  • salsa

Note that the original recipe calls for spices like cayenne pepper and cumin. The basil and oregano was what I was limited to – they are required in the recipe but are not the main herbs flavoring the dish.

Directions:

  1. Heat oil in a large pan and dice the vegetables. You will want them to cook until they’re golden.
  2. While the veggies are cooking, add in your herbs and spices. You’ll notice that I didn’t give an exact measurement for the seasonings and that’s because I rarely cook with the amount given on a recipe. I go a little crazy with my seasonings so feel free to add as much or as little as you wish.
  3. Now is a good time to preheat your oven to 350 while the veggies are almost done sauteing. Once the veggies are done, turn the stove top off and remove them from the heat. You will then pour the shredded cheese packet over your mixture and stir until the cheese is melted.
  4. While the oven is preheating, you will prepare the enchiladas for baking. Spray the bottom of a glass pan down with Pam and then put a layer of the salsa of your choosing on the bottom. Then you will fill your tortillas with three or so spoonfuls of the cheese and veggies, wrap them up, and place them in the pan.
  5. Once all of the enchiladas are rolled and ready, add a layer of salsa to the top of them and then sprinkle some cheese to top it off. Bake the enchiladas for 12-14 minutes and then remove from the oven.

Kyle and I also prepared a dish of guacamole together, as well. I was so happy that I had Kyle there to help me because he was such a pro at smashing all of the ingredients together! Here’s the recipe that I free styled for the guac:

Ingredients:

  • 1 avocado
  • 1 handful of extremely finely chopped red onion
  • cilantro
  • 1 tablespoon of water
  • juice of half a lemon

Directions:

  1. Cut the avocado in half and then peel away the skin from both halves. Then you will dice up the avocado and add it in to a medium mixing bowl. Be sure to remove the pit!
  2. Tear up your fresh cilantro and add that in to the bowl, as well.
  3. Chop up a small amount of red onion very finely and add it to the mix.
  4. Pour in your water and squeeze your half a lemon.
  5. Once all of your ingredients are in the bowl is when things get tricky. There wasn’t an adequate utensil at Kyle’s house for mashing our concoction so we settled for a spoon with holes in it. I was so bad at smashing our mixture so thank goodness for my muscle man to get the job done! The consistency of your guacamole is up to you. We settled for a medium consistency and it was the perfect mixture of smooth and chunky.

I love cooking for Kyle and it was so nice to have him hanging out with me in the kitchen while I prepared our meal. It was also great having him as my helper, too! Kyle kept the pit of “our first avocado together” to commemorate his helpfulness and our delicious meal – which I thought was the cutest thing ever! It’s our avocado baby. 🙂

Big Chill Kitchen Makeover

Hi everyone and welcome to a fun Kitchen Makeover edition of lifewithlilred, compliments of Big Chill! When I was asked to create my dream kitchen by Big Chill, I just couldn’t refuse. They specialize in vintage appliances that are sure to make an amazing centerpiece to get people talking at your next dinner party. There are so many darling choices to pick from that it was hard to choose a favorite! Shop along at: bigchill and see how I would decorate my dream kitchen:

^^^ The thing about my style, is that it’s very eclectic. There’s no rhyme or reason for why I like certain things and I’m never too concerned about creating the perfect match. Is my dream kitchen worthy of being featured in the top five “world’s most beautiful kitchens”? Probably not, but I sure had a good time making it! Take a peek inside my mind and see why I picked the items featured above:

Cherry Red stove: As I browsed through Big Chill’s website, the first item that really caught my eye was their Cherry Red stove – which shouldn’t be that big of a surprise! As soon as I saw it, countless ideas for a retro 1950’s chic kitchen began to bloom and I knew that I wanted it for my centerpiece. Yes, it’s one of my favorite colors but it’s just so darn fun! I love to cook and thinking about creating meals for my family on this little beauty made me so happy. It’s bright, cool, and the perfect pop of color for a kitchen that wows.

Kitchen cabinets: I like how the cabinets that I found are kind of shabby chic. They scream “1950’s starter home kitchen” to me and I think it’s really charming. Once you have true vintage style appliances line the ones from Big Chill, you just have to ride out the theme and I think these cabinets do it perfectly. I would change the color to a few shades lighter but other than that, I’m a fan!

Black dishwasher: Despite all of the darling colors you can pick from on Big Chill’s site, I didn’t want to go too crazy and stuck with a classic black dishwasher. To me, the color looks matte, which is nice because it lets the vibrant appliances like the refrigerator and stove do the talking. Of course, you may need the help of Ferris Plumbing, Heating & Cooling to get it fitted but that can make your kitchen refit even more convenient. Not all homes from back in the day had a dishwasher but it was a must for me because Lil Red does not do dirty dishes!!

Hand towels & wall art: I wanted some sweet hand towels to lay around the kitchen so I kept with the color red and found some cute checked ones to scatter about. They’ll be perfect for slopping up spills of wine, coffee, and junk food! I also wanted some unique pictures to hang and I really like the black utensil decor. The wall art is simple but it still looks sharp and stands out and I think they’ll make a great addition to my dream kitchen.

Beach Blue refrigerator: Oh yes, I love love LOVE this Big Chill fridge! The Beach Blue color is so vibrant and bright, it’s just delightful. I also really like combining this cheery blue with the Cherry Red stove. This refrigerator is pure fun and I couldn’t imagine how envious my friends would be if I had this appliance in my home.

Kitchen table: A vintage style kitchen needs just the right table and I adore the red and white dinette that I found. It looks like it came straight out of the cutest mom and pop diner and it really ties the retro theme together. All it needs now is a nice big bowl of fresh fruit and a vase full of bright and blooming flowers.

Pink Lemonade Microwave: For Lil Red, a microwave is a must. No one likes to cook all the time! I went with Big Chill’s Pink Lemonade microwave for my kitchen. I didn’t want to repeat any of the colors of the other appliances so I went with the pink, which is a color I don’t normally pick. I like how girly and sweet it is, though, and I think it compliments the other appliance colors really nicely. The Pink Lemonade color is more muted, too, which I think is a plus. A microwave any brighter would probably clash with the other items in my kitchen.

Vanilla walls: To complete my kitchen, I would paint the walls a rich and creamy vanilla. To me, that color is a neutral even though it isn’t your standard black, white, or beige. I think the vanilla walls would make the Big Chill appliances really pop and it has a great quirky and retro feel overall.
