Best Toast EVER

Hello! I absolutely love to cook for my family and friends. Nothing pleases me more than seeing people enjoy what I have made and whenever we have company, trust and believe I have to whip up a little something something! Although Johnny and I think my cooking is the bomb.com, there is something about other people’s cooking that just hits different. For example, my mom and I make the exact same mac n’ cheese recipe and I always think that hers tastes better than mine. In fact, I recently had her mac n’ cheese and shared my sentiments and told her a little story about Johnny’s scrambled eggs…

Two or so years ago I got really sick after getting one of my Covid boosters. I was having hot flashes and chills, my body felt like I got ran over by a truck, and it was straight up agony. During that time, I wasn’t eating much and drinking ALL of the blue Gatorade. Then, when my appetite came back I requested scrambled eggs and toast that Johnny made for me. I kid you not when I say it was the best scrambled eggs I had ever had in my life and Johnny was so pleased with himself! 🙂

This past Monday I was feeling pretty lousy. I didn’t sleep well on Sunday night and I was so busy in the morning that I didn’t have time to eat breakfast before my shift. By the time I got home after work, I was so exhausted and freaking starving. I made myself something quick and easy but that didn’t curb my hunger one bit and I knew I would need a snack before taking my nighttime medication. My beloved Johnny tapped in for the assist and made my order of toast with “lots of butter” while I went upstairs to lay down.

A few minutes later he returned with my toast and, once again, I kid you not that it was the best toast I ever had lol. Was it because I was so hungry or because it was made with love? Who’s to say? All I know is that it tasted like manna from heaven! I repeat, there is just something about when other people make food for you that hits different! As I ate, I could literally feel myself feeling better and I could tell it made Johnny happy. I think he felt how I feel when I make food for him! He’s, admittedly, not the best chef but my main squeeze can make a mean scrambled eggs, toast, and oven pizza like nobody’s business! What a heck of a guy. ❤

A snack as simple as toasted sourdough bread, beaucoup butter, and Johnny’s secret ingredient of a pinch of salt got me feeling right again. I think he needs to make it for me from now on!!

Snack Attack

Howdy!! I wouldn’t call myself a big snacker. That’s all my husband’s department lol. Johnny is all about crackers, chips, popcorn, and candy to munch on. I much prefer having a meal and eating actual food until I’m satisfied. That’s not to say that I don’t have my vices, however. I absolutely LOVE tortilla chips and dip. It could be hummus, spinach artichoke dip, salsa, queso, street corn dip – literally anything and I am so there for it. Very much like my darling niece, I am happiest at a Mexican restaurant with a bowl of chips, salsa, and queso! I have never found a grocery store equivalent to queso from a Mexican restaurant. That is, until mine and Johnny’s last grocery shopping trip to Marc’s. Check it out:

In my neck of the woods, Marc’s is a discount grocery store and beloved staple. It is famous for its “closeout aisles” and generally much cheaper prices to its competitors. Every time Johnny and I do grocery shopping, I like to get myself a new container of salsa from their refrigerated section. There are always different variations to what they had previously and it’s nice to have a slight switch up on my favorite snack. During our last trip, the Margaritaville salsa caught my eye. We also decided to throw caution to the wind and get some queso dip from a brand called Gordo’s. Spoiler Alert: The cheese dip was SO good that I made Johnny go back and get more a few days later!

With a kitchen full of fresh groceries, Johnny requested that I make my jalapeno popper quesadillas – one of our favorites. That could be very easily arranged and I was excited to try out our new dips! The chipotle garlic salsa was, hands down, the best grocery store salsa I have ever had. It was spicy, tangy, and each bite was jam packed with zippy pieces of pepper and garlic. The queso took the cake, though! Guys, I kid you not, this queso tastes exactly like what you would get at a Mexican restaurant. If I had a bowl of both queso options, I don’t think I could tell the difference and it is a game changer to snack time. The Gordo’s queso is a true taste alike brand and I can only hope that they continue to carry it at Marc’s. Fingers AND toes crossed. 😀

If you are a salsa and queso fan, I cannot recommend the Margaritaville and Gordo’s brand more highly. RUN, don’t walk to find them because your Snack Attack will never be the same!

The Best Spinach Artichoke Dip EVER

Hi! One of my favorite snack foods has to be spinach artichoke dip with tortilla chips or Wheat Thins. I love the cheesy goodness along with the crunch of your dipping utensil and I enjoy it so much that I can eat it by the fork full! One of my client’s moms just so happens to make the best spinach artichoke dip that I have ever tasted and I am going to share it with all of you. The secret ingredient? Water chestnuts! Prepare to drool in five, four, three, two, one…

Spinach Artichoke Dip

  • 1 bag of fresh spinach (Think the size of a salad mix)
  • 1 bar of Philadelphia cream cheese
  • 1 can of water chestnuts
  • 1 can of artichoke hearts
  • 1 small bag of shredded mozzarella cheese

Chop up the veggies, mix everything together, and bake until light brown on top.

This recipe for spinach artichoke dip surpasses any kind that I’ve ordered at the restaurant or bought at the store by a landslide. The variety of cheeses combined with the crisp crunch of the water chestnuts makes my taste buds do a dance for joy every time. This is the perfect treat to make for a party or game night with your friends (I’ve already made it quite a few times for my “crew” and it has been a hit.) … But you might want to double the batch as it will go quick!

Special K Cereal Obsession

Hi everyone and happy Monday! Cereal has always been the perfect anytime food, to me. It’s great in the morning, but I find that it’s even better for dinner or a late night snack. My grocery store recently was giving away a box of Special K cereal as their weekly freebie, which was pretty sweet in itself. But, oh my goodness, the sweet deliciousness definitely lies in the cereal, for sure.

The Special K cereal with berries and peaches is the freaking bomb.com. The cereal flakes have the perfect amount of crisp crunch to it, even after you pour your soy or almond milk over top of it. And, as soon as the milk hits the dried berries, they instantly plump up, making them taste freshly picked. The peaches and blueberries are as sweet as can be, and the raspberries add just the right amount of tartness to it to tone down your sweet tooth a smidgen!

But, the best part? The yogurt pieces!! These amazing little guys are jam packed with probiotics and taste EXACTLY like white chocolate. So delicious! So much so, that I think I am going to go pour myself a bowl right now. 🙂
