Amazing Elote Recipe

Howdy! During a grocery shopping trip, I couldn’t resist buying a few ears of corn before the summer is out. On a whim, I decided to kick things up a notch by trying my hand at making elote. I was feeling very inspired by the amazing elote I had at the Italian Fest that Johnny and I attended in July and knew it couldn’t be that hard to make. I am SO glad that I gave it a go because not only was it easy peasy but it was absolutely delicious. In fact, I’m like ninety-nine percent confident that the food truck I purchased elote from used the exact same recipe I did and I thought mine turned out even better! Check it out:

Elote: Love and Lemons

I don’t make corn on the cob very often and the few times I have, I boiled it. I genuinely had no idea if you could bake it in the oven or not so after giving it a Google, I thought that was the best way to go. After removing the husks, I wrapped each one in foil, painted them with butter and olive oil, and let it bake in the oven for about twenty-five minutes and turned them halfway through. My one note is that I wish I let them bake a hair longer at thirty minutes. The corn was fully cooked and easy to sink your teeth into but it wasn’t quite as tender for my liking.

As the corn baked, I began making the aioli to coat the ears with. This consisted of mayonnaise, lime juice and zest, and cilantro. I used more than the recipe called for for the lime juice and zest and am glad I did because the flavor was so tangy despite the creaminess of the cojita cheese. I also added additional chili powder for good measure for an extra kick. After the aioli was made and the corn was baked, all that was left to do was the assembly.

I coated the corn generously with the sauce, cojita cheese, and chili powder. I love the flavor of lime so I squeezed a couple of wedges onto my elote for good measure. The end result was just fantastic if I do say so myself. So good, in fact, that I had two ears of elote along with my veggie burger! I couldn’t believe I made something that tasted even better than the original elote I tried and was very proud of myself. The lime and chili powder were bold but not overpowering and the pairing with cojita cheese provided a sweet heat that I couldn’t get enough of. Now I know that whenever I have a craving for elote, I can make it myself and enjoy every bite.

If you love a good ear of elote too, then I truly can’t recommend this recipe enough. You will be the star of end of summer barbecues!!

Italian Fest Fun

Howdy! In my neck of the woods, there is always something fun going on in Downtown Cuyahoga Falls. From performances and festivals to outdoor movie nights and big holiday events, it is a popular place to be. The area is lined with cute boutiques, tasty restaurants, and cozy bars and is the crowning jewel of CFalls. The festivals that take place include the Italian Fest, Irish Fest, and Oktoberfest and Johnny and his parents loved to go to all of them back in the day. Myself on the other hand? I have NEVER been to one Riverfront Fest and that really blew Johnny’s mind as I have lived in Cfalls my entire life. This past weekend was the Italian Fest and Johnny has been so anxious to take me to my very first one so we stopped by on Saturday. Check it out:

Whenever Johnny talks about different Riverfront Fests, I always say the exact same thing: “So you just walk around and eat?” The answer is always a resounding YES and I now know that to be very true lol. When we got to the Riverfront, it was lined with food trucks of every kind imaginable. There were some vendors, games to play, and a band prepping to start but all I cared about was filling my stomach. I was starving!

My only request for the Italian Fest was that I absolutely had to get a fresh squeezed lemonade because it is one of my favorite summer treats. We decided to take a lap around to see which food truck we would order our lunch from. Blessedly, a lemonade stand was right at the beginning of our rounds and I basically ran to it and ordered myself a large cup. When Johnny caught up, he asked me why I didn’t get the fifteen dollar tanker and I told him I didn’t want to put him out because this date was on him. Even though my large lemonade was already ready, he asked the girls working the booth if I could have a Tanker too and they happily obliged. This freaking growler of lemonade was as hilarious as it was heavy and Johnny and I took turns toting it around and sipping liberally. It was DELICIOUS and we both plan on jokingly taking our Tanker to work as our water tumbler for the day. What a hoot! 🙂

Saturday was an incredibly hot day and we thought it would be better to grab some grub and take it home to eat. Us vampires can’t be in the sun for too long and we are trying to be much more cautious after the Great Sunburn of 2025 from Geneva On The Lake! Regardless of this plan, I was too damn hungry to not get at least a snack while we continued to scope out food trucks. I knew exactly what I wanted too – a huge piece of street corn from a local vendor. I have heard nothing but good things about Johnny Lote’s street corn and all of the rumors are true. It was divine and I could have knocked back several ears no problem. Johnny Lote’s food truck is always at the Akron Rubberducks games and I know what I will be getting next time we cheer on our home team to Duck Em Up. 😀

Johnny had talked up the Stromboli from the Italian Fest for so long and that’s what we decided to go with. As much as I would have loved some pasta, I wasn’t trying to have a steaming bowl of marinara on a hot AF day lol. We ordered a classic Stromboli for Johnny and a veggie one for me and I couldn’t wait to dig in. Since Johnny had been singing the Stromboli praises for forever, we thought we were both in for a treat. Sadly, it was quite possibly the worst Stromboli we have ever had. They were doughy, soggy, and had minimal fillings so it was pretty much just like eating soggy uncooked bread. It was SO disappointing and I was STILL hungry but at least I got my Tanker!!!!

The Italian Fest experience was exactly what I knew it would be: Walking around and eating food. But I am so glad that I got to go to my first one with Johnny and he was so proud to take me. We had a blast even if the Stromboli sucked!

DIP ISLAND!!!!!!!

DIP ISLAND!!!!!!!

Hello!!! After being fed the frig up by the sky high prices at Giant Eagle, Johnny taught me the joys of grocery shopping at Aldi’s this past week. It was AWESOME and we saved over one hundred dollars during our shopping trip. We have been enjoying all of the new to us food and drinks and, as lame as it sounds, it is exciting every time I open the refrigerator!

One thing that I was really hoping I would find at Aldi’s was the Pickle De Gallo dip and I was so happy that it was available in mild and medium heat. It is absolutely delicious and a must for any pickle fan! I didn’t have any intentions of buying more dip after that, but I couldn’t say no to a Hummus Quartet and Street Corn dip! Chips, veggies, and dip are mine and Johnny’s favorite snack and these purchases have improved Dip Island a million fold. Check it out:

For those of you who don’t know, Dip Island is how Johnny and I refer to our go to snack. And, yes, all it is is various dips and chips on a table lol. I tried the Street Corn dip when I made cheesy gordita crunches for dinner and it really blew my mind. It was so creamy, cheesy, and flavorful and was amazing on top of the street corn corn chips. Together, it formed a blast of lime and chili spices and I was in heaven. It was also a fantastic deal – I paid three dollars for the chips and three for the dip. At Giant Eagle, a similar purchase would have been close to or beyond ten dollars.

Johnny isn’t a hummus fan at all, but I make up for it for the both of us. I LOVE hummus of any kind and my favorite way to have it is dipped with mini red, yellow, and orange bell peppers. A container of Sabra hummus at Giant Eagle costs around six dollars and the bell peppers are between four and five. At Aldi’s, I only spent seven dollars! I was so excited to have found the Hummus Quartet, which gave the option of alternating flavors with every bite. The Original, Garlic, and Red Pepper ones are all good, but I am especially partial to the Cilantro Jalapeno. I got that flavor of hummus as an appetizer at a restaurant with Johnny and the one from Aldi’s tastes just like it! 😀

Aldi’s has revolutionized Dip Island and I am so grateful. As always, if you are looking for ways to save money on groceries – head to your local Aldi’s. I deeply regret not doing it sooner!
